Healing Kitchari Recipe

Kitchari is an Ayurvedic dish meaning mixture, usually of grains. This is a very cleansing, nourishing and super appetizing meal. Some people even go on kitchari cleanses where they will eat only kitchari, three times a day for two to seven days, maybe longer for some. 

Ingredients:

1 Cup of Green or Yellow Mung Beans

1 Cup Basmati Rice

2Tbs Oil

9 cups of filtered/spring Water

4-6 Cups of Seasonal Vegetables

(Carrots, Kale, Brussel Sprouts, Cabbage, Sweet Potato, ect)

2 Yellow Onions

1/3 Cup of Grated Ginger Root

2 Tsp Each of Cumin Seed and Turmeric

1 Tsp of Cumin Powder, Fennel Seeds, Fenugreek Seeds and Coriander Powder, Black Pepper

3 Cardamom Pods

8 cloves of garlic, chopped

1/2 Tsp Red Chilis, Crushed

2 Bay leaves

3 Cloves

1 Cup of Cilantro (optional)

Rinse rice and beans until water runs clear. Heat oil in a pot and add seeds and toast until a slight popping sound. Add in bay leaves and all the powdered spices. Mix together. Stir in the rice and beans. Add 9 cups of water and the cloves, cardamom pods, red chilis and vegetables. Bring to a boil and reduce to a simmer. Begin to chop onions, garlic and ginger. In a separate pan, brown the onions, garlic and ginger in oil and then combine with the simmering rice and bean mixture, stirring often. Cook for at least one hour, until the rice and beans and soft and the kitchari has a soupy porridge like consistency. Serve warm and add cilantro if desired.
